Ingredients

  • 4 slices beef tenderloin (≈200g)
  • Salt
  • freshly ground pepper
  • 50 g ready‑made herb butter
  • 2 tbsp seed oil
  • 1 sprig chicory
  • 0.5 head arugula
  • 0.5 head red lettuce
  • 1 radicchio
  • 1 Batavia salad
  • 3 tbsp seed oil
  • 1 tbsp red wine vinegar
  • salt (pepper)

Instructions

    Wash the salads well, pat dry and tear radicchio, arugula, batavia, and red lettuce into small pieces. Wash chicory, cut off the stem with a sharp knife, and tear into leaves.

    Heat oil in a heavy skillet, add steaks to the hot fat and sear for 1 minute on each side over high heat. Reduce heat and cook steak slices for 2–4 minutes per side.

    Season steaks with salt, remove from pan and wrap in foil. Deglaze the pan with some hot water.
