Starfruit Cream Tartlets

Ingredients

  • 250 g flour
  • 100 g butter
  • 80 g sugar
  • 0.5 orange (including juice and zest)
  • topping
  • 100 g quark
  • 100 g yogurt
  • 100 g cream cheese
  • 2 tbsp powdered sugar
  • 100 g fresh raspberries
  • 4 starfruit
  • 3 tbsp maple syrup
  • butter (for the molds)
  • legume for blind baking
  • strawberries (for garnish)
  • mint (for garnish)

Instructions

    Knead flour, sugar, butter and orange juice and zest into a smooth dough. If the dough is too crumbly, add a little water. Wrap in cling film and rest 30 minutes. Then roll out on a floured surface and cut to mold size. Line buttered molds and shape a rim. Prick dough with a fork several times and cover with parchment paper and legumes. Blind bake in preheated oven at 200°C fan for about 10 minutes. Remove from oven, discard legumes and paper, let cool slightly, then release from molds and chill on racks.

    Mix quark with yogurt, powdered sugar and cream cheese, fold in reserved raspberries and fill the tartlets. Wash starfruit, slice into rounds and place over the cream. Drizzle with maple syrup and serve garnished with fresh strawberries and mint.
