Chocolate Muffins

Ingredients
- 200 g dark chocolate
- 200 g cherries (pitted, finely chopped)
- 100 g butter
- 100 g sugar
- 200 ml milk
- 1 egg
- 100 ml sour cream
- 250 g flour
- 2 tsp cornstarch
- 1 tbsp baking powder
- 3 tbsp cocoa powder
- 1 pinch salt
- paper liners
- 80 g couverture chocolate (dark)
- 100 g whipped cream
- 2 tbsp grated chocolate
- 12 cocktail cherries with stems

Preheat the oven to 180°C.

Chop the chocolate into small pieces with a knife.

Heat the butter in a saucepan, add 50 g of chocolate and melt. Whisk together milk, egg, sour cream, and sugar using an electric mixer. In a bowl combine flour, cornstarch, baking powder, cocoa, and salt well. Add the milk mixture, chocolate butter, cherries, and remaining chocolate pieces, stirring with a wooden spoon until smooth.

Line muffin tin depressions with paper liners. Pour batter in and level the surface. Bake on middle rack for about 25-30 minutes. Let cool in the tin for 10 minutes, then remove and cool on a wire rack.

Melt the couverture chocolate and drizzle over muffins. Place a dollop of whipped cream on each, sprinkle grated chocolate, and garnish with cherries before serving with coffee.
