Bean Gelée with Cream

Ingredients

  • 800 g fresh, thick bean pods
  • 500 ml vegetable broth
  • 5 sheets gelatin
  • 6 leaves basil
  • 50 g crème fraîche
  • 300 ml whipping cream
  • Salt
  • Pepper (freshly ground)

Instructions

    Open the bean pods and remove the beans. Bring the broth to a boil and cook the beans for about 10 minutes. Immediately shock them in ice water and drain well. Set aside 250 ml of the broth. Remove the tough outer skins from the beans.

    Soak the gelatin in cold water. Dissolve the drained gelatin in the still-warm broth. Distribute about one-third of the beans into four glasses. Top with the broth until just above the beans and refrigerate for about 2 hours.

    Wash the basil and cut into fine strips. Blend the crème fraîche, whipping cream, and remaining beans in a mixer until smooth. Season with salt and pepper, mix in the basil, and fill the glasses. Keep chilled until serving.
