Mirabelle Gratin with Pears and Raisins

Ingredients

  • 3 eggs
  • 400 ml milk (3.5% fat)
  • 200 g spelt whole‑grain flour
  • 1 tsp Baking powder
  • 2 tbsp honey
  • 50 g Raisins
  • 350 g mirabelle plums
  • 2 pears

Instructions

    Whisk the eggs, milk, flour, baking powder and honey until smooth, then let rest for about 20 minutes. Soak the raisins in lukewarm water for about 20 minutes.

    Meanwhile wash the mirabelles, halve them and pit them. Peel the pears, halve them, core and dice them.

    If needed, grease the baking dish and mix the fruit with the drained raisins. Pour the batter into the dish and spread the fruit mixture on top. Bake in a preheated oven at 200 °C (180 °C fan‑forced; gas: level 3) for about 30 minutes until golden brown (test with a skewer). Dust with powdered sugar if desired and serve hot.
