Ingredients

  • 800 g pre‑cooked squid tubes with tentacles (ready to cook)
  • 2 onions (finely diced)
  • 1 garlic clove (minced)
  • 2 tbsp oil
  • 250 g chopped tomatoes (canned)
  • 2 tbsp Tomato paste
  • 0.5 tsp cumin
  • 2 tbsp parsley (chopped)
  • Salt
  • black pepper (freshly ground)

Instructions

    Sauté onions and garlic in hot oil. Stir in tomato paste. Add tomatoes and pour in about 100 ml water. Season with cumin, a pinch of salt and pepper. Simmer for about 15 minutes, stirring occasionally.

    Add parsley, taste, then fill a baking dish. Place the squid tubes and cover with sauce. Roast in a preheated oven at 180 °C for about 20 minutes.
