Tuna with Lemon Sauce

Ingredients
- 4 fresh tuna steaks (about 120 g)
- 5 untreated lemons (best organic)
- olive oil (cold pressed)
- Salt
- pepper (from grinder)
- 0.5 bunch parsley (roughly chopped)
- 6 tbsp green olives (in oil)
Instructions

Season the tuna steaks with salt and pepper, then drizzle them with the juice of 2 lemons and 4 tbsp olive oil. Let marinate for 1 hour.

Wash the remaining lemons and cut into wedges. Drain the steaks. In a hot pan without adding extra oil, sear each side for 1–2 minutes. Remove the steaks and set aside on a plate.

Heat 2–4 tbsp of oil and the rest of the marinade in the still-hot pan, then fry the lemon wedges until they brown nicely. Turn off the heat and squeeze a little juice from the wedges with a fork. Place the wedges over the tuna and drizzle some hot lemon‑oil over each piece. Season with salt and plenty of pepper, sprinkle with parsley, and garnish with 2–3 olives per serving. Serve immediately.
