Ingredients

  • 800 g calamari rings
  • 150 g flour
  • 250 ml white wine
  • 2 Eggs
  • Salt
  • pepper (ground)
  • oil (for frying)
  • chopped parsley (for garnish)
  • lemon zest

Instructions

    Wash the calamari and pat dry. Separate the eggs.

    Whisk the flour with the white wine until smooth. Stir in yolks, a pinch of salt and pepper, then fold in beaten egg whites. The batter should be thick.

    Coat the calamari in the batter and fry portions in hot oil for about 2 minutes until golden brown. Drain on paper towels and sprinkle with parsley. Serve with lemon wedges if desired.
