Sprout Salad with Peas and Crab Meat

A fresh sprout salad featuring peas, crab meat, orange zest, and a bright vinaigrette from Spoonsparrow.

Ingredients

  • 150 g pea sprouts
  • 100 g peas
  • Salt
  • 150 g crab meat
  • 1 untreated orange
  • 1 tbsp white balsamic vinegar
  • 4 tbsp grape seed oil

Instructions

    Wash the sprouts, rinse, and shake dry. Blanch the peas in salted water for 2-3 minutes, cool quickly and drain well. Distribute the sprouts on a plate.

    Break up the crab meat and scatter over the salad. Zest the orange, squeeze out the juice. Combine both with vinegar and oil, season with salt, drizzle over the salad, and serve.
