Sponge cake with whipped cream and berries

Ingredients
- 5 egg yolks
- 200 g sugar
- 150 g flour
- 5 egg whites
- 2 tbsp rum
- 0.25 L whipping cream
- 2 sheets gelatin
- 500 g mixed berries (e.g., currants, blackberries, raspberries, strawberries etc.)
- 5 tbsp sugar
Instructions

Beat the egg yolks with the sugar until fluffy. Add the flour.

Whisk the egg whites to stiff peaks and fold into the batter. Pour into a greased springform pan and bake in a preheated 180°C oven for about 40 minutes. Let cool on a rack and soak with rum.

Whip the cream to stiff peaks. Soak gelatin sheets for 10 minutes, squeeze out excess water, then dissolve in boiling water until clear.

Fold the dissolved gelatin into the whipped cream. Chill in the refrigerator for 20 minutes until slightly set.

Meanwhile wash, prepare, and sweeten the berries. Spread the cream over the cake base and sprinkle evenly with berries.
