Sweet Pinecone Syrup

Ingredients
- 500 g young pinecone tips (freshly collected)
- 500 g sugar
- 500 g honey (cold-pressed)
- 200 g young pinecone tips (freshly collected)

Cut the fresh pinecone tips (only clean and harmless tip ends) into small pieces and fill a screw-top jar with them and the sugar. Then let them soak in warmth for 3 days.

Transfer the pinecone-sugar mixture to a pot. Briefly bring to a boil, then simmer gently with the lid open for 15 minutes.

Strain the pinecone solids and pour the hot syrup into two 250 ml screw-top or canning jars.

Store the pinecone syrup in a cool place. After several months it will crystallize.

For pinecone honey, ensure the young tips are completely dry and not washed. Place them in a jar. If the honey is thick, warm it gently in a water bath until liquid, then pour over the tips. All equipment must be very clean—rinse with boiling water or high-proof alcohol beforehand to prevent fermentation. Let the honey rest for 3–4 weeks, then optionally liquefy again in a water bath and filter into a clean jar, cool, and use as regular honey. This honey is an effective remedy for coughs and stays good when refrigerated for several months.
