Sweet Spring Roll with Apple

Ingredients
- 20 dough pieces (for spring rolls, frozen)
- 4 tart apples
- 2 plums
- 4 tbsp palm sugar
- 4 tbsp Coconut Milk
- 4 tbsp shredded coconut
- 2 limes (juiced)
- vegetable oil (for frying)
- fruit syrup (optional or thick juice)
Instructions

Halve the apples, peel them, remove cores and dice into small cubes. Drizzle lime juice over them. Wash the plums, halve, pit and also dice small. Toast the shredded coconut without fat until golden yellow. Simmer palm sugar and coconut milk over low heat until the sugar fully dissolves. Add the apple and plum cubes and cook briefly (apple cubes must not become mushy). Remove from heat and fold in the toasted coconut.

Let the spring roll wrappers thaw. Lay dough sheets on a work surface and place 2 tbsp of filling in the center of each sheet. Fold one corner of the wrapper over the filling, then bring the sides inwards over the filling and roll up the rest.

Heat vegetable oil in a pot or wok until very hot (oil is hot enough when small bubbles rise from a wooden spoon stick).

Fry the rolls portion by portion in the hot oil for about 3 minutes until golden yellow. Drain on paper towels. Serve warm with fruit syrup.
