Ingredients
- 1 kg fresh young spinach leaves
- Salt
- 1 Garlic clove
- 50 g butter
- black pepper (freshly ground)
- nutmeg
Instructions

Wash, rinse, and trim the spinach; briefly collapse it in boiling salted water. Remove, shock with cold water, and squeeze out excess moisture.

Peel and finely chop the garlic; sauté in a hot pan with half the butter. Add the spinach, wilt briefly, and season with salt, pepper, and nutmeg. Plate the spinach and garnish with remaining butter flakes.
