Sweet potato fries are a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients
- 800 g sweet potatoes
- Sea salt
- vegetable oil (for frying)
- 150 g crème fraîche
- 100 g yogurt
- 2 tbsp finely chopped herbs (chervil, parsley, thyme)
- 1 Garlic clove
- 1 tsp lemon juice
Instructions

Peel, wash and cut the sweet potatoes into long, finger‑thick sticks. Blanch in boiling salted water for 2–3 minutes, drain, rinse with cold water and pat dry.

Heat oil in a deep fryer or large pot (if you hold a wooden stick in it, bubbles should rise). Fry the potato sticks in batches for about 4 minutes until golden brown. Drain on paper towels and season with salt.

For the dip whisk together crème fraîche, yogurt, herbs, pressed garlic clove and lemon juice until creamy.

Serve the fries in paper bags as desired and offer the herb dip alongside.
