Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 1 small stalk leek
  • 2 Potatoes
  • 1 l vegetable broth
  • 500 g spinach (washed and trimmed)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp lemon juice
  • 2 tbsp almond slivers

Instructions

    For the soup, peel and finely chop the shallot, garlic, and potatoes. Add them with the chopped leek to the vegetable broth and bring to a boil; simmer covered for about 20 minutes. Then add the spinach, bring to a boil again, and simmer for another 5 minutes. Remove from heat, blend everything into a smooth soup, and season with lemon juice, salt, and pepper.

    To serve, ladle the soup onto plates and sprinkle with almond slivers.
