Spicy Paprika Soup

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 2 red chili peppers
  • 100 g waxy potatoes
  • 1 Carrot
  • 3 red bell pepper halves
  • 2 tbsp olive oil
  • 800 ml vegetable broth
  • Salt
  • Pepper
  • 100 g crème fraîche
  • 1 tsp lemon juice
  • a pinch of sugar
  • freshly chopped basil (for garnish)

Instructions

    Peel and dice the onion and garlic. Wash, halve, deseed, and chop the chili peppers. Peel and cut the potatoes and carrot into pieces. Wash, halve, deseed, and chop the bell pepper halves.

    Sauté all vegetables in a hot pot with oil for 2-3 minutes until colorless. Add broth, season with salt and pepper, and simmer gently for about 20 minutes until tender. Then puree finely and let it reduce slightly if desired or add more broth. Stir in crème fraîche, do not boil again, and adjust seasoning with salt, pepper, lemon juice, and sugar.
