Spinach Quiche with Cheese

Ingredients
- 250 g flour
- 125 g butter
- 1 pinch salt
- 1 egg
- 600 g spinach leaves
- 1 onion
- 1 tbsp butter
- Salt
- pepper (ground)
- 1 tsp chili powder
- 100 g Feta
- 150 g grated Gouda
- 100 ml whipping cream
- 1 egg
- 40 g grated Parmesan

Preheat the oven to 200°C.

Sift flour onto a work surface, mix in salt and create a well in the center. Cut cold butter into small pieces, distribute around the well, add the egg, pour in about 2–3 tbsp lukewarm water, and with a knife cut through all ingredients until small dough crumbs form. Quickly knead by hand into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

Wash, trim, rinse spinach and drop it into lightly salted boiling water to wilt, then drain, shock in cold water, and let dry. Squeeze out excess moisture and finely chop.

Peel and finely dice the onion. Sauté in a little butter until translucent. Add the spinach and cook for 2 minutes. Season with salt, pepper, and chili powder. Crumble feta and mix with Gouda.

Roll the dough between two sheets of cling film and line a greased baking tin with it.

Mix cheese into the spinach and spread over the dough. Whisk cream, egg, and Parmesan together, season with salt and pepper, and pour over the spinach mixture. Bake in the preheated oven (middle rack) for about 35 minutes.
