Ingredients
- 200 g Flour
- 150 g butter
- 1 egg
- 1 tsp salt
- butter (for the pan)
- 200 g smoked bacon
- 3 eggs
- 150 ml milk
- 200 ml whipping cream (at least 30% fat)
- 3 tbsp grated Gruyère cheese
- 0.5 bunch chives (cut into rings)
- Salt
- pepper (ground)
- Nutmeg (freshly grated)

Knead flour, butter, egg and salt into a shortcrust pastry, wrap in foil and chill for 30 minutes. Roll the dough very thin between two sheets of cling film and place it in a greased tart pan. Raise an edge about 2 cm high. Preheat the oven to 200°C fan.

Cut the bacon into small cubes. Beat the eggs. Mix milk with cream, eggs, salt, pepper, nutmeg, cheese, chives and bacon, then pour over the pastry.
