Lothringer Bacon Quiche

A fresh quiche recipe featuring smoked ham, Gruyère cheese and a creamy custard filling.
Ingredients
- 250 g flour
- 1 pinch salt
- 125 g cold butter
- butter (for the pan)
- 250 g smoked ham
- 250 ml Whipping Cream
- 3 eggs
- pepper (ground)
- nutmeg
- 50 g freshly grated Gruyère cheese
Instructions

Knead the flour with a pinch of salt, cubed butter and 3 tbsp cold water into a ball, roll out between cling film and line the greased pan. Chill for 45 minutes.

Preheat the oven to 200 °C (fan).

Crisp the diced ham in a pan while stirring, then drain on kitchen paper.

Whisk the cream with the eggs, season with salt, pepper and nutmeg, fold in the cheese. Spread the ham over the dough, pour the custard mixture on top. Bake in the preheated oven for 25‑30 minutes until golden brown.
