Savory Beet Cake

Ingredients
- 225 g flour
- 50 g butter
- 0.5 tsp Salt
- 1 onion
- 1 small tart apple
- 1 tbsp butter
- 500 g cooked beetroot
- 120 ml broth
- 5 eggs
- 200 ml whipping cream
- 100 g grated cheese
- Salt
- Pepper
- chopped chives (for garnish)
Instructions

Quickly knead flour, butter, 1 egg and salt into a shortcrust dough. Wrap in foil and chill for about 30 minutes.

Peel and finely dice the onion. Wash, core and grate the apple. Peel and grate the beetroot. Melt butter in a pan, add onion, beetroot and apple, and sauté briefly. Season with salt and pepper, pour in broth, and simmer on low heat for about 10 minutes. Preheat oven to 175°C.

Roll out dough thinly on a floured surface and line a greased baking tin with it. Whisk eggs with cream, season with salt and pepper. Fold the cooled beet mixture into the egg mixture, spread over the crust, and sprinkle grated cheese on top. Bake in the middle rack for about 30-40 minutes. Serve sprinkled with chives.
