Ingredients
- 1 frozen puff pastry dough (TK)
- 200 g spinach
- 1 shallot (diced)
- 1 garlic clove (finely chopped)
- 1 tbsp butter
- 100 g black olives (pitted)
- 100 g quark
- 2 tbsp crème fraîche
- 200 g sheep cheese
- 200 ml whipping cream
- 2 Eggs
- Salt
- black pepper (ground freshly)
- nutmeg (ground)
- butter (for the pan)
Instructions

Let the dough thaw and line a buttered quiche tin with it.

Wash, trim, and roughly chop the spinach.

Sauté the shallot and garlic in hot butter, then add the spinach. Cook until all liquid has evaporated. Remove from heat.

Combine quark with crème fraîche and sheep cheese, then stir in cream and eggs. Season well with salt, pepper, and nutmeg.

Spread the spinach and olives over the dough. Pour the cheese mixture on top and bake in a preheated oven at 180°C (fan) for about 35-40 minutes until golden brown.
