- 500 g fresh spinach leaves
- Salt

- 200 g Cream cheese
- 2 carrots
- 2 tbsp chopped herbs

Wash, trim, and wilt the spinach in a pot over high heat until it collapses. Transfer to a colander, rinse under cold water, and drain thoroughly. Peel the carrots, cut them lengthwise into halves or quarters depending on thickness, and blanch in boiling salted water for 1 minute. Remove, rinse, and drain. Line a tart pan with the puff pastry, shaping a small edge. Separate the eggs. Beat the egg whites with a pinch of salt to stiff peaks. Whisk the yolks with butter, nutmeg, and ½ tsp salt until frothy. Coarsely chop the spinach, then fold it together with the herbs and cream cheese into the whipped mixture. Season as desired, spread onto the pastry, and top with the carrots. Bake in a preheated oven at 200 °C for about 30 minutes (check with a toothpick).
