Onion Quiche with Bacon

Ingredients
- 250 g flour
- 180 g butter
- 1 egg
- Salt
- 150 g onions
- 50 g diced bacon
- 2 tbsp grated cheese
- 300 ml whipping cream
- 300 ml milk
- 4 eggs
- nutmeg
- a pinch of salt
Instructions

Knead a smooth dough from flour, butter, egg and salt. Shape into a ball, wrap in cling film and chill for about 30 minutes.

Finely dice the onions and bacon for the filling. Drain and press out excess liquid with a kitchen towel.

Whisk together cream, milk, eggs, nutmeg and salt using a mixer until well combined.

Roll out the dough on a floured surface. Line a greased round baking tin with the dough and blind bake at 220°C for 10 minutes.

Lower the oven to 180°C. Keep the dough in the tin and evenly distribute onions, bacon and cheese over it. Pour the egg mixture over the top.

Bake the quiche on the lower rack until golden brown, about 35 minutes.

Serve warm or at room temperature.
