Onion and Cheese Quiche with Arugula

Ingredients

  • 90 g flour
  • 40 g Butter
  • 1 small egg yolk
  • 1 tbsp butter
  • 1 tbsp Olive Oil
  • 500 g onions
  • 1 Garlic clove
  • 0.5 tbsp sugar
  • 2 Eggs
  • 150 g whipping cream
  • 40 g grated Gruyère cheese
  • Salt
  • black pepper (freshly ground)

Instructions

    Preheat the oven to 200°C.

    Combine flour and butter with fingertips until crumbly. Add the egg yolk and 2–3 tbsp cold water, then knead quickly into a dough. Shape into a ball, wrap in cling film, and refrigerate for about 30 minutes. Peel and halve the onions lengthwise, then cut across into strips.

    Peel and finely chop the garlic. Heat butter and oil in a large pan. Add the onions and garlic, cover, and cook over low heat for about 30 minutes until the onions are soft but not browned. Sprinkle with sugar and cook for another 5 minutes.

    Whisk together eggs, cream, and cheese. Season with salt and pepper. Roll out the dough between two sheets of parchment paper and line a smaller greased quiche tin (about 20 cm diameter). Spread the onions over the base and pour the egg‑cream mixture on top. Bake in the preheated oven for 20 minutes. Reduce the temperature to 180°C and bake for another 20–25 minutes until the quiche is nicely browned. Serve immediately, e.g., with arugula salad.
