Spinach puree with turkey from Spoonsparrow: Although spinach does not contain as much iron as often assumed, it is still a good portion to find.

Ingredients

  • 50 g potatoes (1 potato)
  • 25 g turkey breast fillet
  • 100 g Spinach
  • 0.5 small orange
  • 1 tbsp Rapeseed Oil

Instructions

  1. 1.

Wash, peel and cut the potato into small pieces.

  2. 2.

Rinse the turkey breast, pat dry and cut into small pieces.

  3. 3.

In a small pot bring 150 ml water to a boil. Add potatoes and meat pieces and simmer covered over medium heat for 10 minutes.

  4. 4.

Meanwhile wash the spinach thoroughly. Remove stems, roughly chop and add to the pot. Cook another 5–6 minutes until the potatoes are tender and the spinach has wilted.

  5. 5.

Squeeze the orange and measure out 1 tbsp of juice. Stir the oil into the cooked ingredients and blend with a stick blender until smooth. Let cool before serving.
