Spinach Pastry

Ingredients

  • 300 g feta cheese
  • 1 bunch parsley
  • 1 onion
  • 500 g spinach
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 125 g butter
  • 1 egg
  • 125 ml milk
  • fat for greasing the pan
  • 500 g yufka dough sheet (1 sheet)
  • 10 tbsp milk

Instructions

    Cut the feta cheese into small pieces. Finely chop parsley and onion. Rinse and wash spinach, place it in a pot with water that is almost dry, let it wilt under high heat, then drain, squeeze out excess liquid, and allow to cool. Squeeze out some moisture from the spinach, roughly chop, mix with feta, onion, and parsley, and season with salt, pepper, and nutmeg.

    Melt butter without browning it. Whisk the egg. First whisk in the milk, then add the warm melted butter slowly while stirring.

    Grease a rectangular ovenproof pan (about 20 by 30 cm). Place half of the dough sheets one on top of another inside the pan, brushing each sheet with the egg mixture. Spread the spinach mixture over them. Cover with the remaining dough sheets, brushing each sheet again with the egg mixture.

    Cut the assembled dish into portions with a knife and drizzle the remaining egg mixture over it. Place in a cold oven (lower rack) and bake at 200 °C for about 40 minutes. Serve warm or cold.
