Wurst in a Puff Pastry

Ingredients
- 500 g sausage meat
- 1 onion
- 1 Carrot
- 1 tbsp freshly chopped parsley
- chili flakes
- Salt
- 300 g puff pastry
- 1 egg
- pepper (ground)

Place the sausage meat in a bowl. Peel and finely chop the onion. Peel and grate the carrot finely. Add both to the meat along with parsley, chili flakes, and salt; mix well.

Preheat the oven to 200 °C (400 °F) with upper and lower heat.

Roll out the pastry (about 40×24 cm) and cut into two rectangles (≈12×40 cm). Spread the filling lengthwise on the center of each strip using a piping bag if desired, leaving a 1–2 cm border. Fold one side over the filling. Brush the edge of the second side with beaten egg, roll up, and press the seam together; optionally crimp with a fork. Slice the rolls into 4–5 cm pieces with a sharp knife and place on parchment‑lined baking sheet. Brush with remaining beaten egg and sprinkle pepper. Bake in the oven for about 20 minutes until golden brown. Serve warm or cold.
