Spinach-Paprika Stuffed Meatloaf

Ingredients
- 2 stale rolls
- 1 Shallot
- 1 Garlic clove
- 300 g fresh spinach leaves
- 1 red bell pepper
- 1 yellow bell pepper
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 800 g mixed minced meat
- 2 Eggs
- 2 tsp medium-hot mustard
- 1 tsp freshly chopped thyme
- 1 tsp freshly chopped parsley

Soak the rolls in lukewarm water. Peel and finely chop the shallot and garlic. Wash, rinse, dry, and spin the spinach. Peel the peppers, halve them, remove seeds and white membranes, and slice into strips.

Heat 2 tbsp oil in a pot and sauté the shallot with garlic until translucent. Add the spinach, let it wilt, then evaporate the liquid. Season with salt, pepper, and nutmeg.

Preheat the oven to 180°C (350°F) with upper and lower heat.

Mix the minced meat with eggs, squeezed rolls, mustard, thyme, parsley, salt, and pepper. Spread onto plastic wrap into a ~2 cm thick rectangle. Place spinach on one half, arrange pepper strips over it, fold the dough over, roll into a log, and place on parchment-lined baking sheet. Brush the top with remaining oil and bake for about 1 hour. Remove, slice, and serve.
