Chicken Thighs in Fiery Sauce

Ingredients

  • 600 g tomatoes
  • 3 stalks celery
  • 1 onion
  • 2 cloves garlic
  • 4 chicken thighs
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp olive oil
  • 6 sage leaves
  • 2 dried chili peppers
  • 20 g green pitted olives

Instructions

    Wash the tomatoes, remove the stem ends and dice into small cubes. Rinse the celery, trim it and slice finely.

    Peel and finely chop the onion and garlic. Wash the chicken thighs, pat dry and season with salt and pepper.

    Heat olive oil in a braising pot, brown the thighs on all sides over medium heat, then remove them. Sauté the onion, garlic and celery in the fat. Slice sage leaves into strips and add. Crush the chili peppers in a mortar and mix with tomatoes and olives.

    Season again, return the chicken to the pot, cover and simmer over low heat for about 30 minutes. Serve on preheated plates.
