Ingredients
- 100 g flour
- 3 eggs
- 250 ml milk
- 3 tbsp chopped parsley
- butter (for frying)
- Salt
- Pepper
- 500 g spinach leaves
- 2 tbsp butter
- 1 Shallot
- 1 Garlic clove
- 1 tbsp Lemon Juice
- Salt
- Pepper
- nutmeg
Instructions

Whisk all dough ingredients together and let rest for a few minutes.

Wash and rinse the spinach. Briefly blanch in boiling salted water, strain, shock in cold water, drain, squeeze out excess moisture, then fluff slightly.

Sauté chopped shallot and pressed garlic in butter until translucent, add spinach, cook briefly, season with salt, pepper, lemon juice, and nutmeg.

Cook 8 thin pancakes from the dough until golden yellow, fill with spinach mixture, and serve.
