Ingredients

  • 80 g young spinach
  • 80 g hazelnuts (peeled)
  • 2 shallots
  • 2 Garlic cloves
  • 10 eggs
  • 50 ml whipping cream
  • 80 g grated cheese (e.g., Gruyère)
  • Salt
  • pepper (ground)
  • nutmeg
  • 2 tbsp Vegetable oil

Instructions

    Preheat the oven to grill mode.

    Wash, trim and dry the spinach. Roast the nuts in a heat‑proof pan until golden brown. Remove, let cool and roughly chop. Peel and finely dice the shallots and garlic. Beat the eggs with cream and cheese, seasoning with salt, pepper and nutmeg.

    Cook each quarter of the prepared ingredients into an omelette. Add 1–2 tsp oil to the hot pan and sauté the shallot‑garlic cubes until translucent. Pour in a quarter of the egg mixture, sprinkle with spinach and nuts, cook briefly, then finish under the grill for 5–6 minutes until golden brown. Repeat with the remaining ingredients to make three more omelettes and serve.
