Russian Potato Herring Salad

Ingredients
- 500 g small potatoes
- Salt
- 2 carrots
- 150 g peas (frozen)
- 1 red-skinned apple
- 2 tbsp white wine vinegar
- 3 pickles (jar, with some liquid)
- 500 g salted herring (in oil)
- 1 onion
- 6 tbsp vegetable broth
- 5 tbsp Rapeseed Oil
- Pepper
Instructions

Wash potatoes and cook in plenty of salted water for 20 minutes. Meanwhile peel carrots, quarter lengthwise and cut into ~1 cm pieces.

Blanch carrot pieces in boiling salted water for 4 minutes; after 2 minutes add peas. Cool vegetables in ice water and drain.

Wash apple, quarter and slice into sticks. Slice pickles into sticks, cut drained salted herrings into bite-sized pieces. Peel onion and finely dice.

Drain potatoes, peel, cut into thicker slices. Mix with prepared ingredients.

Whisk broth with 3 tbsp pickle juice, salt, pepper, and oil; pour over salad and mix. Let sit briefly and adjust seasoning.
