Ingredients

  • 300 g sheep cheese
  • 1 bunch parsley
  • 1 onion
  • 1 kg spinach
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 125 g butter
  • 1 egg
  • 125 ml milk
  • fat (for the pan)
  • 500 g yufka dough sheet (1 sheet)
  • 10 tbsp milk

Instructions

    Cut the sheep cheese into small pieces. Finely chop parsley and onion. Rinse and wash spinach, place it in a pot with a little water, cook over high heat until wilted, then drain, let cool, squeeze out excess liquid, roughly chop, mix with cheese, onion and parsley, season with salt, pepper and nutmeg.

    Melt butter without browning. Whisk the egg. First add milk, then stir in the warm melted fat.

    Grease a rectangular ovenproof pan (about 20 by 30 cm). Place half of the dough sheets on top of each other in the pan, brush each sheet with the egg mixture. Spread spinach over them. Cover with remaining dough sheets, brushing each sheet again.

    Cut the casserole into portions with a knife and drizzle with the remaining egg mixture. Put it in a cold oven (lower rack) and bake at 200 °C for about 40 minutes. Serve warm or cold.
