Ingredients

  • 200 g filo dough (frozen or brick dough)
  • 600 g fresh spinach
  • 1 Garlic clove
  • 1 onion
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • a pinch nutmeg
  • 125 g feta cheese
  • 1 egg

Instructions

    Thaw the filo dough according to package instructions. Clean and wash the spinach thoroughly, then blanch it in a pot over high heat until wilted. Drain in a sieve, let dry, then chop.

    Peel and finely chop the onion and garlic. Sauté both in a pan with olive oil over medium heat until translucent. Add the spinach, season with salt, pepper, and nutmeg, and cook uncovered until all liquid evaporates. Let it cool slightly.

    Roll out the dough and cut into four pieces. Spread the spinach on each piece, leaving a 1 cm border around the edges. Crumble the feta over the spinach. Separate the egg; brush the dough edges with egg white. Roll each piece lengthwise into a spiral and twist into a coil.

    Place the coils on parchment paper-lined baking sheet, brush lightly with beaten yolk, and bake in a preheated oven at 200 °C (180 °C fan) for about 25 minutes until golden brown.
