Filo Parcels Filled with Potatoes

Ingredients

  • 500 g starchy potatoes
  • Salz
  • 1 Shallot
  • 1 Garlic clove
  • 2 EL olive oil
  • 1 egg yolk
  • 2 EL freshly grated parmesan
  • 1 EL fresh chopped thyme
  • 1 EL fresh chopped parsley
  • Pfeffer (from the mill)
  • 200 g filo dough
  • 750 ml plant oil (for frying)
  • Zitronenspalten (for garnish)

Instructions

    Cook potatoes in their skins in salted water for about 30 minutes until tender. Peel and press through a potato masher. Dice shallot and garlic finely. Sauté together in hot oil, then mix into the mashed potatoes. Add egg yolk, parmesan, thyme, parsley; season with salt and pepper. Brush one filo sheet with water, place a second sheet at a 45° angle on top.

    Brush again with water and spoon a tablespoon of potato mixture onto it. Fold edges up and press over filling. Fry in hot oil for about 3–4 minutes until golden brown. Drain on kitchen paper and serve with lemon wedges if desired.
