Hackfleischkuchen

Ingredients
- 400 g Cauliflower
- 1 onion
- 2 tbsp chopped parsley
- 300 g pickled pumpkin (jar)
- 50 g Pine nuts
- 3 tbsp oil
- 750 g ground beef
- 50 g Raisins
- Salt
- Cayenne pepper
- 0.5 tsp freshly grated ginger
- 0.5 tsp ground cumin
- 250 g goat fresh cheese
- 3 egg yolks
- 300 g filo dough (4 sheets)
- butter (for the pan)
- 2 tbsp liquid butter

Clean cauliflower and cut into very small florets. Peel onion, halve lengthwise and slice into strips. Drain pumpkin, reserving the liquid, and slice pieces. Toast pine nuts in a dry skillet.

Heat oil in a large pan, brown ground beef until crumbly, then add onions, pumpkin with liquid, raisins, pine nuts and cauliflower; simmer about 10 minutes. Season with salt, cayenne pepper, ginger and cumin, and fold in parsley.

Mix goat cheese with egg yolks and stir into the meat mixture.

Cut filo sheets in half, layer overlapping halves in a greased springform pan, leaving enough dough over the edge to cover filling. Pour meat mixture, top with remaining dough, brush surface with butter. Bake at 180°C for about 30 minutes.
