Ingredients

  • 500 g dough bread
  • 400 ml milk
  • 300 g spinach
  • 1 Shallot
  • 1 tbsp butter
  • 2 Eggs
  • 1 handful freshly chopped parsley
  • Salt
  • nutmeg
  • Pepper (freshly ground)
  • semolina breadcrumbs (as needed)
  • 60 g Butter
  • 80 g Parmesan

Instructions

    Fill a large bowl with the dough bread. Bring the milk to a boil, pour it over the bread and let it soak.

    Wash, trim, and roughly chop the spinach. Peel and finely dice the shallot; sauté in hot butter until translucent. Add the spinach and cook until wilted. Let the liquid evaporate and remove from heat. Add eggs, parsley, salt, pepper, and nutmeg to the dough bread and mix well. Let it rest for about 10 minutes. Fold in the spinach, add more milk or breadcrumbs if needed, and season to taste. Shape the dumpling mixture into 12 small dumplings with wet hands.

    Cook the dumplings in boiling salted water in a large pot for about 15 minutes until firm.

    Meanwhile, melt butter in a small saucepan over low heat. Remove the dumplings with a slotted spoon, drain, and arrange on plates. Pour the melted butter over them and sprinkle with freshly grated parmesan before serving.
