Ingredients

  • 500 g fresh pickling cucumber
  • 4 shallots
  • 2 fresh red chilies
  • 100 ml white wine vinegar
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp allspice seeds
  • 1 tsp salt

Instructions

    Wash the cucumbers thoroughly, pat dry and cut into 2 cm cubes.

    Fill clean jars with the cucumber cubes. Peel and quarter the shallots. Wash the chilies, halve them and remove the seeds.

    Boil 250 ml water with vinegar, honey, soy sauce, allspice, peppercorns, salt, shallots and chilies. Let the liquid cool slightly and pour it over the cucumbers. Seal the jars and refrigerate for at least 12 hours.
