Panforte

Ingredients
- 50 g dried apricots, cashews and lemon zest
- 25 g red currants and pistachios
- 100 g pine nuts
- 125 g flour
- 1 tsp cinnamon
- a pinch ground coriander
- 150 g liquid honey and sugar
- powdered sugar (for dusting)

Coarsely chop the dried apricots, cashews, pine nuts, pistachios, and red currants. Mix everything with lemon zest, flour, cinnamon, and coriander. Line an 18 cm diameter baking pan with parchment paper and oil the rim well.

Add sugar and honey to a pot and simmer while stirring for 2-3 minutes. Quickly stir into the nut mixture. Transfer the mixture quickly into the pan and press it flat with a spoon dipped in water, working fast. Bake in a preheated oven at 150°C (gas: level 1‑2, convection: 130°C) for about 35‑40 minutes.

Release the rim with a sharp knife, remove the rim, let Panforte cool. Dust with powdered sugar and cut into small cake pieces with a sharp knife.
