Ingredients
- 50 g chocolate (shaved)
- 1 Banana
- 2 tbsp lemon juice
- 4 tbsp oil
- 2 Eggs
- 70 g sugar
- 6 tbsp buttermilk
- 250 g flour
- 0.5 sachet baking powder
- 200 g powdered sugar
- 2 tbsp lemon juice
- 2 tsp cocoa powder
- food coloring (optional)
- 1 muffin tin with 12 cavities (or 24 paper liners)
Instructions
-
1.
Peel the banana, finely mash it with a fork and mix in lemon juice.
-
2.
Whisk eggs with sugar, oil, and buttermilk until frothy. Fold in banana mixture. Combine flour with baking powder and briefly stir in chocolate until all dry ingredients are moist.
-
3.
Grease the muffin tin (or insert two paper liners into each cavity).
-
4.
Fill the cavities (or liners) with batter and bake in a preheated oven at 200°C (center rack) for about 20-30 minutes.
-
5.
Remove and let cool. Whisk powdered sugar with lemon juice until thick. Take about 2 tsp, darken with cocoa. Color the white glaze as desired and spread generously over the muffins. Put the brown glaze into a small plastic bag, cut a tiny corner, spray rings onto it, then use a toothpick to create spiderweb patterns outward and let dry.
