Spicy Yeast Loaf with Ground Meat

Ingredients

  • 0.5 cube fresh yeast (21 g)
  • 400 g flour
  • 1 tsp sugar
  • 1 tsp salt
  • 4 tbsp olive oil
  • flour (for dusting)
  • 1 onion
  • 1 Garlic clove
  • 1 red bell pepper
  • 50 g black olives (pitted)
  • 1 tsp Dried oregano
  • 1 tsp Sweet paprika powder
  • 400 g ground meat
  • Salt
  • Pepper
  • 250 g mozzarella
  • olive oil (for brushing)

Instructions

    Crush the yeast and stir it into a little lukewarm water (3-4 tbsp) until smooth. In a bowl, combine the flour with the prepared yeast mixture, sugar, salt, olive oil, and about 180 ml lukewarm water to knead a supple dough that no longer sticks to the bowl edge. Cover and let rise in a warm place for about an hour.

    For the filling, peel and finely dice the onion and garlic. Wash, halve, clean, and dice the bell pepper. Roughly chop the olives and mix them with the onion, garlic, oregano, paprika powder, and pepper pieces into the ground meat.

    Preheat the oven to 200°C (400°F) with both top and bottom heat. Line a baking sheet with parchment paper.

    On a floured surface, knead the dough again and divide it into four equal parts. Roll each part into a rectangle about 20x15 cm. Spread the ground meat mixture over each rectangle. Dice the mozzarella and sprinkle it on top of the filling. Roll each piece from one long side to form a log, then cut in half lengthwise and braid the two halves together. Pinch the ends firmly together. Place the braids on the prepared baking sheet and brush them lightly with olive oil.

    Bake in the oven for about 25 minutes until golden brown.
