Ingredients

  • 300 g flour
  • 20 g yeast
  • 150 ml milk
  • 25 g butter
  • 1 tsp saffron
  • 1 egg yolk
  • butter (for greasing the baking sheet)
  • 8 eggs

    Sift flour into a bowl, create a well in the center. Crumble yeast into 4 tablespoons of lukewarm milk, pour into the well, cover with a little flour from the rim, and let rest covered for 15 minutes. Dissolve remaining milk with butter and saffron over gentle heat. Mix the pre-ferment with the flour, add the butter mixture, and stir in the egg yolk using a dough hook. Knead for about 10 minutes until the dough lifts off the sides. Cover and rise for 45 minutes.

    On a well-floured work surface divide the dough into eight portions and shape each into a 50 cm long roll. Twist each roll like a spiral around an egg. Place the egg nests on a greased baking sheet. Warm butter, brush the nests with liquid butter, and bake at 180°C (fan) for about 30 minutes until golden brown. Remove eggs, dye them, let cool, and place back into the nests.
