The basic yeast braid recipe from Spoonsparrow is unbeatable: always fluffy and juicy!

Ingredients

  • 500 g flour
  • 42 g fresh yeast (1 cube)
  • 100 g whole grain sugar
  • 125 ml lukewarm milk
  • 80 g soft butter
  • 1 packet vanilla sugar
  • 1 egg
  • 1 egg yolk
  • 1 tbsp condensed milk

Instructions

    Add flour to a bowl and form a well in the center. Break in the yeast, mix with 1 tbsp whole grain sugar and half of the lukewarm milk. Cover the bowl with a kitchen towel and let the pre-ferment rise for 15 minutes in a warm place.

    Add the remaining whole grain sugar, the rest of the milk, butter, vanilla sugar, and egg to the mixture and knead with hand mixer attachments until smooth. Keep covered and let rise in a warm spot for 35 minutes until visibly enlarged.

    Briefly knead dough on a floured surface. Divide into three portions and shape each into a long roll. Braid the rolls together, pressing ends firmly together. Place the braid on a baking sheet lined with parchment paper and let rise again for 5 minutes.

    Whisk egg yolk with condensed milk and brush over the loaf. Bake in a preheated oven at 180°C (160°C fan, gas: level 2-3) for 30-35 minutes.
