Ingredients
- 200 g cooked shrimps
- 1 Shallot
- 2 tbsp mayonnaise
- 2 tbsp crème double
- Salt
- ground pepper
- Lemon juice
- 3 eggs
- Salt
- 2 tbsp freshly chopped herbs (e.g., dill and chives)
- 50 g melted butter
- 100 g flour
- 100 g herb quark
- oil for the waffle iron
- freshly chopped dill for garnish

Rinse the shrimps and drain well. Peel and finely chop the shallot. Mix with mayonnaise, herbs, and crème double. Season with salt, pepper, and lemon juice. Stir in herbs and cover to chill.

Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Whisk the yolks with melted butter until fluffy, then fold in quark, sift flour over, and mix. Finally fold in the beaten egg whites and herbs. Brush the waffle iron lightly with oil and bake 8 waffles to golden brown one at a time.
