Shrimp Cocktail
A true party classic that is indispensable: Try the Spoonsparrow recipe for shrimp cocktail.
Ingredients
- 2 egg yolks
- 2 tbsp Orange juice
- Salt
- Pepper (freshly ground)
- 0.25 l vegetable oil
- 3 tbsp ketchup
- 2 tbsp cognac
- 0.125 l heavy cream (at least 30% fat)
- 1 Mango
- 1 Avocado
- 250 g shrimp
- 250 g cooked, shredded lobster meat
- 1 tbsp capers
- 1 chicory
- dill sprigs
- 1 tomato (quartered)

Whisk the egg yolks, orange juice, salt and pepper together. Drizzle in the vegetable oil slowly until a mayonnaise forms. Then stir in ketchup and cognac. Fold in lightly whipped heavy cream. Peel the mango and cut its flesh into strips around the pit; set aside some strips for garnish and dice the rest.

Halve the avocado, remove the pit, scoop out the flesh with a spoon and cube it. Combine shrimp, shredded lobster meat, diced mango, diced avocado, capers, and cocktail sauce in a bowl. Cover and refrigerate for about an hour to allow flavors to meld. Split chicory into leaves and cut them at an angle into points. Serve the shrimp cocktail in glasses, garnished with chicory tips, dill sprigs, and tomato wedges.
