Ingredients
- 1 cucumber
- 2 young carrots
- 2 Tomatoes
- 1 small yellow bell pepper
- 5 g mixed herbs (about 1 handful; e.g., chives, parsley, basil)
- 1 Shallot
- 1 tbsp herb vinegar
- 2 tbsp olive oil
- Salt
- Pepper
- 200 g coconut yogurt
- 150 g sprouted grains (rye, barley, wheat)

Clean and wash the cucumber, cut it lengthwise into quarters, deseed, and dice. Peel and grate the carrots. Clean, wash, and finely dice the tomatoes. Halve the bell pepper, remove seeds, wash, and dice. Wash the herbs, pat dry, set aside about one‑third, and finely chop the rest.

Peel and finely dice the shallot. Whisk together vinegar and olive oil in a bowl, season with salt and pepper, fold in the vegetables, and let it sit for about 15 minutes. Then stir in the coconut yogurt and chopped herbs.

Arrange the sprouted grains on a plate, spoon the vegetable mixture over them, and garnish with the reserved herbs.
