Spicy Tomato Sauce (Ketchup)

Ingredients
- 3 kg ripe tomatoes
- 5 garlic cloves
- 150 g onions
- 30 g dried tomatoes
- 75 g sugar
- 8 cloves of peppercorns
- 4 cardamom pods
- 0.5 tsp ground black pepper
- 2 tsp hot paprika powder
- 0.5 tsp allspice
- 0.5 tsp ground nutmeg
- 0.5 tsp ground cinnamon
- 150 g apple cider vinegar
- 2 tsp salt

Wash the tomatoes, roughly dice them and place in a large pot. Peel and chop garlic and onions and add to the tomatoes. Dice the dried tomatoes and add all remaining ingredients to the pot. Stir well.

Bring the tomatoes to a boil and simmer over low heat for about 2 hours until the ketchup has reduced by one third. Wash jars or bottles hot, rinse thoroughly, flip them onto a clean kitchen towel.

Pass the mixture through a coarse sieve and bring it back to a boil. If the ketchup is still too thin, continue cooking until the desired consistency is reached. Pour the hot ketchup into the jars or bottles, seal immediately, and place upside down for 5 minutes. Store opened bottles in the refrigerator.
