Ingredients

  • 12 tarragon sprigs
  • 3 shallots
  • 2 strips untreated lemon zest
  • 1.4 l apple cider vinegar
  • 4 allspice berries
  • 4 peppercorns

Instructions

    Wash the tarragon and shake dry. Peel the shallots and cut into strips. Place the tarragon, shallot strips, and lemon zest in one or two clean jars. Warm the vinegar in a pot and pour it over the tarragon and shallots until about two finger-widths above them.

    Seal tightly and let steep for 2 weeks in a warm place, shaking occasionally. Then fill two decorative sterilized jars with washed tarragon sprigs and the spices. Pour the vinegar through a muslin cloth into the jars. Label the bottles as a nice takeaway gift.
