Ingredients

  • 1 kg apricots
  • 2 cm ginger (ca. 30 g)
  • 2 onions
  • 2 small red chilies
  • 3 kaffir lime leaves
  • 270 ml rice vinegar
  • 150 ml orange juice
  • 1 tsp coriander seeds
  • 300 g cane sugar

Instructions

    Score the apricots and blanch, peel, halve and pit them. Quarter the apricots, cut one‑third into small pieces. Peel and finely chop the ginger and onions. Slice the chilies into thin rings. Wash the lime leaves and cut into wide strips.

    Mix the vinegar, orange juice, coriander seeds and sugar in a pot and slowly heat while stirring. Cook over medium heat for about 40 minutes. Fill the hot sterilized jars with the mixture and seal tightly. Turn upside down to cool.
