Spicy Stuffed Crepes

Ingredients
- 200 g Flour
- 300 ml milk
- 2 Eggs
- Salt
- 3 tbsp olive oil
- 400 g spinach
- 1 onion
- 1 Garlic clove
- black pepper (freshly ground)
- nutmeg
- 200 g mozzarella
- 50 g freshly grated hard cheese (e.g., Pecorino)
Instructions

Whisk the flour into the milk until smooth, fold in the eggs and season with a pinch of salt. Let rest for about 20 minutes.

Blanch the spinach briefly in salted water, shock it in ice water, squeeze out excess liquid and roughly chop. Peel and finely dice the onion and garlic. Sauté both in one tablespoon of hot oil until translucent, add the spinach, remove from heat, season with salt, pepper and nutmeg, then let cool. Dice the mozzarella.

Preheat the oven to grill mode.

Heat a little olive oil in a pan and fry eight thin crepes one at a time.

Lay each crepe on spinach (without liquid) and spread some mozzarella on top. Roll up the crepe and place seam side down in a greased baking dish. Sprinkle with cheese and bake under the grill for about 10 minutes until golden brown.

Serve the crepes as desired with salad.
